As it cools, the refreshing flavors of apple and lime are layered with exotic flavors of blackberry and pineapple, and the acidity gradually changes from apple-like to a tart acidity like grapes.
The Sidra grape variety is experimentally grown in a 1-hectare plot of the 29-hectare farmland of Juan Martin Farm. Cherries are harvested when they reach a sugar content of 18 degrees, and the washed process involves a two-stage, long fermentation process: 24 hours for the cherries, and 48 hours in a fermentation tank after removing the pulp.
